When we talk about ingredient functionality, we have nothing but our customers in mind. We truly understand what our ingredients add to the food matrix, in terms of their physical and chemical functionalities. Agricultural products, by definition, are natural and will always have a slight degree of variance. Origin and growth process combined with post-harvest processing will determine the functionality of our raw materials and our ingredients. Knowing that, we always think alongside our customers about how they would need to incorporate our ingredients in their end applications and help them make their ideas and ambitions for new products real. Fat filled milk powders from Olam deliver unique functionality in beverage and bakery applications while meeting customers' cost targets. Additionally, as a manufacturer ourselves, we understand the importance of reducing production complexity and improving operational efficiency, with our wide selection range of high quality and tailor-made ingredients, we facilitate our customers in meeting these goals.

But great taste, snap and bite with an appealing product colour, doesn’t always match the increasing consumer desire for less additives in their food products. Therefore, we are always looking for opportunities to develop natural ingredients without the use of additives to suit clean label applications. Our nut ingredients deliver incredible texture, taste and nutrition without any complex artificial ingredients. Another example is the development of our “TrueDark” cocoa powder, whilst staying away from colour enhancing additives. And there is more. How we do it? Looking at the common denominator of our product portfolio, one can safely say that health benefits is one of them.
The nutritional value of our nuts, the macro and micronutrients of dairy, the theobromine and antioxidants in our cocoa products and the health associations of some of our spices really form a wealth of opportunities for our customers. We do not take these health benefits for granted, but look how we can go further, by discovering even more beneficial elements in our products and developing them in such a way that they are available in the best possible way in consumer applications.
Since our purpose is to re-imagine global agriculture and food systems, we place a lot of value on trying to get everything out of our raw materials.
We not only create value for our farmers, but also seek to minimise waste. We are exploring and developing new ingredients where no other company has ever looked. Our sweet and fruity cascara for instance, was developed out of coffee husks, which is the skin and pulp of the coffee cherry fruit. The ingredient is now used for beverage infusions and concentrates across multiple applications to meet the growing trend for healthy indulgence.
