    Olam Cocoa launches innovative new cocoa powder and customer support tools at Food Ingredients Europe 2017

    London, November 28, 2017Olam Cocoa, the world’s foremost focused supplier of cocoa beans and cocoa products (cocoa powder, cocoa mass and cocoa butter), showcases the innovative, premium cocoa powder deZaan D11BK, the new deZaan Flavour Friends pairing tool, and the latest iteration of the historic deZaan Cocoa Manual at Food Ingredients Europe (FIE) Stand D100, Hall 11.

    New, dark cocoa powder without added sodium

    deZaan D11BK cocoa powder is the first ever nib alkalised, black cocoa powder that provides both intense cocoa flavour and very dark colour, without added sodium. Excessive salt intake remains a serious health concern globally, with the majority of it consumed unknowingly in processed foods. Unlike other dark cocoa powders, which are typically processed using sodium alkalising agents, D11BK uses potassium instead, reducing the sodium in the formulation while maintaining the flavour and colour impact benefits of a typical dark cocoa powder.

    Working alongside Dutch master Chef Angelique Schmeinck, Olam Cocoa has created Flavour Friends, a tool that enables the discovery of new or unexpected flavour and ingredient relationships. It provides interesting options for the combination of deZaan cocoa powders with various fruits, beverages, herbs, spices, nuts, seeds, teas and vegetables, and it launches at FIE 2017. Customers can explore and enjoy examples of these flavour pairings in dairy applications, as part of a new instant cocoa beverage sample collection.

    A legacy of leadership looks to the future

    At FIE, Olam Cocoa is also unveiling the latest edition of the famous deZaan Cocoa Manual, one of the most respected and coveted cocoa reference resources in the industry. Starting from the first manual edition published in 1969, the manual’s content has been unmatched in depth and scope of information. To help customers keep abreast of global trends, the new 2017 version includes a chapter dedicated to the health aspects of cocoa. Alongside the launch of D11BK and Flavour Friends, the manual exemplifies Olam Cocoa’s ability to provide expertise, value-added benefits and unique opportunities to its customers.
